Carob tree’s fruits are the most employed parts in phytotherapy. Carob’s dust regulates intestinal transit and cures digestives problems, thanks to the presence of fibers and pectins in its composition, which guarantee the protection of intestinal mucosa. Due to its high sugar and oligoelements content, which increase their volume in the stomach, carob has the power of blocking the hunger by causing a sense of fullness. Carob’s rubber contains many polysaccharides, that are complex sugars which can substitute starch. Organic carob’s flour is recommended for people with a specific food regime, with serious diseases of digestive tract or with people fresh from contagious diseases. Organic carobs have a taste similar to the cocoa one, but the only difference is that carobs are more rich in nutritious properties and less calorific; carobs don’t contain any psychoactive substances and, due to this reason, they represent a valid substitute for chocolate, for people who are allergic or intolerant to it.
